    MANDARIN CHINESE LESSONS – week ending 6 October 2017 Dear 小朋友 xiǎo péng yǒu (pupils), 老师lǎo shi (teachers) and 家人jia rén (families), Happy Mid-Autumn Moon Festival! 中秋节快乐! This past Wednesday on 4 October 2017 was Mid-Autumn Moon festival.  To celebrate we have been talking about the moon festival in Mandarin Chinese.  To see some of the stories behind the Mid-Autumn Moon see: We also tried some traditional celebrations foods: Mooncakes yuè bĭng 月饼 Pomelo Flavours: Lotus seed, red bean. Can include preserved egg yolk or plain. Pomelos are either pink or yellow in the inside Mooncakes can be found at Wing Yip Foodstore in Croydon, 544 Purley Way, London CR0 4NZ.  They were sold out last week but the bakery next door still sells these.  Closest transport: 157 bus or Waddon Train station and 10 minute walk Recipe for Mooncakes Thank you to Logan who asked for a recipe to make these at home. Videolink to see how these are made: and Time to make: 5 hours total (1/2 hour preparation, 4 hours resting dough, 1/2 hour to cook) INGREDIENTS: For the dough: 100g plain flour 4 ml alkaline water 70g golden syrup 25 ml of vegetable oil ¼ teaspoon of vanilla extract   Filling: 1 can lotus seed or red bean paste (430 g) available from Chinese grocery store   Eggwash (optional) 1 egg and 1 Tablespoon water INSTRUCTIONS Mix Golden syrup, alkali water and vanilla extract. Then add oil Then add flour and gently knead for 30 seconds until all flour combined Cover bowl with and let dough rest for 3-4 hours Preheat oven to 180 or 160 (fan) Dust the dough with flour, gently knead and divide into 15g pieces of dough shaped into a ball Divide the filling into 35g balls Flatten the dough balls into small circles that can be wrapped around the ball of filling Wrap the dough around the filling using flour when needed to stop the dough sticking Place balls in a mooncake mould or jello mould or use a cookie cutter as a mould. Place moulded mooncake on parchment sheet on cookie tray. Mist with water (to prevent dough from cracking) then place in oven. Bake for 20 minutes (or bake 10 mins then paint with eggwash before baking for a further 10 minutes). Enjoy!  Ms. Yuan 袁老师
